I gotta have faith a faith a faith.

I haven't had the time or energy to plan meals (or shop for them) so this week is an impromptu clean out the kitchen week. Just in case you haven't figured that out already.

"Clean Out The Kitchen Mexican Chicken" (6 quart pot)

~3 boneless, skinless chicken thighs, partially frozen (Because I forgot to defrost them overnight.)
~3/4 of a (15 oz) can of black beans, drained and rinsed
~1 c frozen corn
~1 c grape tomatoes, halved
~Trader Joe's Spanish style vermicelli and rice, cooked

Add chicken to crock pot.
Dump beans, salsa, corn, and tomatoes on top.
Cover and cook on low for 8 hours.
Serve over vermicelli and rice.

3 servings.
I have no faith in myself AT ALL when it comes to crocking without a recipe in front of my face. Keep that in mind when I say that was awesome. AND once again, my little helper surprised us and actually ate his very own serving. (Tomatoes and all!)
