Harvey Wallbanger, MD.

Our next door neighbor (Hi Amanda!) was going to come over for dinner and dessert tonight. She was going to cook dinner and I was going to crock dessert. She let me know she had to cancel AFTER I'd made my Harvey Wallbanger cake. We ordered wings. Are you surprised? Really?

Harvey Wallbanger. Never heard of him? Me neither. Apparently, he's not a person, it's a drink. Obviously, I hadn't heard of it either.

Our liquor cabinet looks a bit sad pitiful these days. I'm a wine fan who has been alcohol-free since January 2009 and my other half is a beer brewer. Just before I went to the liquor store to get some Galliano, I Googled it looking for cocktail recipes. I didn't have to go because I KNEW we already had some! The bottle is kind of unmistakable. I inherited my grandmother's liquor when she moved out of her house an into an assisted living facility. It wasn't really that much and most of it is long gone. We still have the ancient bottle of Galliano, though. We never knew what to do with it...except make Sandie taste test it at a Halloween party (Hi Sandie!) I'm kind of glad I never threw it away.

"Harvey Wallbanger Cake" (6 quart pot)

~Betty Crocker's pound cake mix
~1/3 cup french vanilla instant pudding mix
~1/4 cup vegetable oil
~3 eggs
~2 T Galliano liqueur
~2/3 cup orange juice

Mix all ingredients.
Beat for 3 minutes.
Pour mixture into greased and floured baking dish that fits into crock pot (I used the cheesecake 1.5 quart CorningWare dish)
Cover and cook for on low for 2 1/2 hours.
Allow to cool.
Invert cake onto serving platter

Glaze:
~remaining pudding mix
~2/3 cup orange juice
~1 T Galliano liqueur

Mix together glaze ingredients.
Spoon over cake

8 servings.
Neighbor Amanda had a rough day (hence the cancelation), so my other half and I took half of the cake over to her when we saw that she made it home. It's a darn good cake. The orange juice compliments the Galliano and is super yummy. I'd definitely make this again. Finally! A use for the Galliano! I might even make myself a Harvey Wallbanger...now that I've heard of him it. As Amanda said, it was just what the doctor ordered!
