I'd mentioned that I was going to make this one day when my other half was not going to be around for dinner. He had other dinner plans last night, so guess what I made? Pork and sauerkraut!
"Pork chops and Sauerkraut" (6 quart pot)
~1 pkg refrigerated sauerkraut, drained
~2 apples, peeled and sliced (I used fuji)
~1 t caraway seed
~1/4 c water
~1 1/2 lb thick boneless pork chops
~1 quart baby small red potatoes, cut in half
~1 T Gulden's mustard
Mix sauerkraut, apples, and caraway seed in crock pot.
Add water.
Add pork chops.
Arrange potatoes around the edges of the pork chops.
Spread mustard on pork chops.
Cover and cook on low for 7 hours.
I miss sauerkraut. This wasn't as flavorful as the dish my mom made for me as a kid, though. This was missing a certain spice and I have NO idea what spice it could be. I'll ask her someday. I'm going to make my other half try some of the leftovers. Maybe he'll surprise us both and actually like it. I'll keep you posted.
