I have a go-to chili recipe that I have yet to make in a crock pot. It's on my list of things to do, though, so it'll end up here someday. I pinky promise.
"Red and White Chili" (6 quart pot)
~Reynolds Crock Pot liner
~6 cups cooked chicken, cubed
~2 cans (15.5 oz each) great northern beans, drained
~1 cup vegetable broth (the original recipe called for chicken, but I had some veggie in the fridge, so I used that instead)
~1 large onion, chopped
~1 large red bell pepper, chopped
~1 jalapeno pepper, chopped
~2 cloves garlic, minced
~2 t ground cumin
~1 t dried oregano
~1/2 t salt
~1/2 t crushed red pepper
Place liner in crock pot as instructed.
Mix all ingredients in crock pot.
Cover and cook on low for 7 hours.
6 servings.
This was really, really good. It probably helped that the chicken I used was crocked chicken. I crocked three chicken breasts in my small pot on Monday while the pot roast was crocking in the big pot. This chili wasn't as spicy as I thought it was going to be. My other half agreed. He grabbed some spicy pepper mix out of the fridge and added some to his bowl. I guess it's safe to say we like our chili on the spicy side.
Dessert...
"Glazed Cinnamon Apples" (3.5 quart pot)
~Reynolds Crock Pot liner
~3 Granny Smith apples, peeled, cored, and cut into 8 wedges
~1 T lemon juice
~1/2 c sugar
~1/2 c light brown sugar, packed
~2 T flour
~1 t cinnamon
~1/4 t nutmeg
~3 T butter, melted
~vanilla ice cream
~2 oatmeal cookies, crumbled
Place liner in crock pot as instructed.
Place apples in crock pot.
Drizzle with lemon juice.
Mix sugars, flour, cinnamon, and nutmeg in medium bowl.
Add sugar mixture to apples and mix until well coated.
Drizzle with butter.
Cover and cook on low for 3 hours.
Serve warm with vanilla ice cream and cookie crumbs.
3 servings.
I halved the original amount of apples and butter because of this week's abundance of leftovers and our desire to try to eat better. It's definitely a good thing I decided to do that because it is AMAZING. I kind of wish there was more. But I'm glad there isn't. Kind of. Maybe. Definitely. Yes.
