We had a friend over for dinner last night (Hi Molly!), so I saved the meal that would make the most food to crock yesterday.
"Chunky Beef Vegetable Soup" (6 quart pot)
~Reynolds Crock Pot liner (That I didn't use because this was 5th dish of the week and the box has only 4 liners)
~3 cups vegetable juice (I used low sodium V8)
~2 cups hot water
~1 pound stew beef
~8 cups mixed veggies
~2 medium potatoes, peeled and cubed
~1 small onion, chopped
~1/4 cup ketchup
~3T beef bouillon
~1/2 t pepper
Put all ingredients into crock pot.
Mix.
Cover and cook on low for 8 hours.
8 servings.
It was a good soup and I'd definitely make it again. It was easy and makes a TON, so it'd be a great soup to make for a pot luck dinner or for a couple with a newborn and no energy to think about dinner.
This ends "What's in the box? week". I've come to the conclusion that the liners would be FANTASTIC if I used them with my small pot. It was super handy for the apples I made the other day. The stoneware for my smaller pot isn't removable and I can't exactly shove the entire crock into the dishwasher, so normally, it involves lots of scrubbing and sometimes soaking. But with the apples? No clean up! I was thinking that I'd buy a box of liners to have on hand for that for the nights I don't feel like soaking the pot overnight, but then I had a brilliant idea! I'll save my money and buy a new small crock pot that has removable stoneware and doesn't burn almost anything I put into it. I like it!
