Easy does it.

I wanted this week to be an easy crocking week because my little helper is turning one next week and my brain is busy wandering off thinking of food to make for his party. That, my friends, is when I realized that I'd seen a dozen or so recipe names containing the word "easy". Voila! A theme! It's "Easy Week!" And our friend Molly came over for dinner!

"Easy Spinach Quiche" (6 quart pot)

~2 flat refrigerated pie crusts
~5 eggs
~1 c spinach dip
~3 oz prosciutto, cubed
~4 oz pepper jack cheese, cubed

Grease crock pot.
Layer pie crusts and smush together to form something resembling a quiche crust
Cover and cook on high for 1 1/2 hours.
Whisk eggs in a small bowl.
Add spinach dip, prosciutto, and cheese to eggs and mix well.
Pour mixture into crust.
Cover and cook on high for 1 1/2 hours or until firm.
Allow to sit 5 minutes before serving.

8 servings.


This was WAY closer to quiche than my last quiche attempt. It wasn't as good as my mother in law's quiche (which is absolutely AMAZING), but it was tasty enough that I'd make it again. Maybe a quiche Lorraine next time. Did someone say bacon?
