Last night, my other half asked me if I could crock something for a coworker of his and his wife who just became first time parents. (Welcome, baby Liam!) Absolutely, I can! He suggested macaroni and cheese since it's "safe" for mom while she nurses. He had NO idea that Sandie had chosen the number 16 (Thanks, Sandie!) and that the sixteenth card was...
"No-Fuss Macaroni and Cheese" (6 quart pot)
~2 c uncooked elbow macaroni
~4 oz cheese cubes (I used cheese ends and have no idea what kinds of cheese it was. I spotted some Muenster.)
~1 c shredded mild cheddar
~1/2 t salt
~1/4 t pepper
~1 1/2 c whole milk (the recipe said skim, but we keep whole in the house for my little helper.)
Combine all ingredients and mix.
Cover and cook on low for 2 hours.
Stir after 30 minutes.
Replace lid and continue cooking.
6 servings.
I sampled a spoonful before packing it up and it tasted like the macaroni and cheese my mom makes (in the oven) minus the breadcrumb topping. I know she uses cheese ends in her recipe, so it makes sense. I'm going to have to make this again...only with the breadcrumby topping because that's what macaroni and cheese is SUPPOSED to have. Next time, I think I'll try to merge my two crocked macaroni and cheese recipes and see what happens. Want to compare? Here's the other one.
Made this last night with a few adaptations (whole wheat pasta, reduced fat cheese, skim milk, and I added cauliflower) and today for lunch I had a serving and it was pretty darn yummy! :) So great! Can't wait for my next meal!
