Buying the ingredients for tonight's dinner could have gone better. It took 3 stores to find the ginger preserves (Amusingly, I found it at the Mars store I've boycotted.) AND I lost my wallet somewhere between checking out at the second store and our kitchen.
I was/am not happy. Have you ever lost a wallet that has your ID and all of your credit cards in it?
This dinner had to wow my socks off. Or else.
"Caribbean Pulled Pork" (6 quart pot)
~2 lbs pork loin
~1/4 c chili sauce
~1 habaƱero pepper (It was supposed to be a Scotch Bonnet, but they don't sell them near me -I checked all 3 stores for this, too-, so I used its "cousin").
~1/4 c red wine vinegar
~1/2 t black pepper
~1 T ginger preserves
~2 T orange juice
~1 T lime juice
~1/2 t allspice
~1/2 t ground cloves
~1/2 t cayenne pepper
~1/2 t oregano
~1/2 t ground cumin
~1/2 t thyme
~1 t liquid smoke
~1 onion, chopped
~2 garlic cloves
~hamburger buns
Add all ingredients (except buns, obviously) to crock pot.
Cover and cook on low for 10 hours.
Remove pork from crock pot and shred with forks.
Return pork to crock pot and toss to coat.
Place pork on buns using a slotted spoon.
6 servings.
This was really good. Super flavorful and super spicy. Have I mentioned that we like spicy?
