I'm baaaaaaaack. Our vacation is o-ver. Instead of relaxing on the beach and eating all of the unhealthy boardwalk food New Jersey has to offer, we're back in Maryland and I am back to crocking the completely random things found in Brad's kitchen (regardless of how old it is).
What fun things are in Brad's pantry? Day 9.
~4 boneless, skinless, chicken thighs (I bought these during my Ineedtocrocksomethingotherthanbeef shopping trip a couple of weeks ago.)
~1 sweet potato, cut into bite-sized pieces (This was ours, too.)
~2 chipotle peppers in adobo sauce
~1/2 c canned pumpkin (from a large can that expired in 2008. You bet your sweet asses I'm going to be using this! Sandra warned me that it was in there, but I had no idea it was from 2008!)
~6 oz Lawry's lemon pepper 30 minute marinade (There was about half of a 12 oz bottle in the fridge. This bottle also expired in 2008. I'm starting to think that Brad hasn't been grocery shopping since 2008.)
~1 handful of fresh baby spinach. (I bought this the day we got home from vacation because I was craving green. Shopping while still full from a week of gluttony is quite possibly the best idea I've ever had.)
Add chicken, sweet potato, peppers, pumpkin, and marinade in crock pot.
Cover and cook on low for 7 hours.
Add spinach and mix well.
Cover and cook as long as it'd take you to find your camera. (A few minutes...until the spinach is wilted.)
4 servings.
Adding the lemon pepper marinade was a last minute decision and as soon as I poured it in, I thought I'd made a BIG mistake.
It wasn't!
This was pretty fantastic. So fantastic that my other half asked if I'd followed a recipe! (Heh.) It's super flavorful, sweet, and pretty spicy. Nomnomnom.
