Making it up.

I crocked this on Tuesday. Crocks like this make up for all of the ones that were veggie-less, right?

"Chicken and Fall Veggies" (6 quart pot)

~3 partially frozen boneless, skinless chicken breasts (because I forgot to defrost them ahead of time. Oops.)
~1 (14 oz) can fire roasted diced tomatoes
~1 turnip, peeled and chopped (From the CSA.)
~2 sweet potatoes, chopped (From the CSA.)
~1 red apple, chopped (From the CSA.)
~1 onion, chopped (From the CSA.)
~3 garlic cloves, chopped (From the CSA.)
~1/4 c cooking sherry
~1 t ground chipotle chili powder

Add all ingredients to crock pot and mix.
Cover and cook on HIGH for 4 hours.

3 servings.
This was pretty darn good. I'm always a fan of things that are sweet AND spicy. Mmm...
