We had 3 Thanksgiving dinners this year. Mine last Tuesday. One at my other half's aunt's house last Thursday. AND a third one at my parents' house on Saturday. I volunteered to bring a crocked side to the Thanksgiving dinner that my mom cooked. She suggested corn, so I immediately decided to make something like THIS. I was crocking at my in-laws (who are severely lacking in the spice rack department), so I ended up with this:
"Cheesy Corn and Peppers II" (6 quart pot)
~2 lbs frozen corn
~2 T butter, cut into cubes
~1 green bell pepper, diced
~1 small jalapeƱo pepper, diced
~1/2 t chili powder
~1 t salt
~1/4 t pepper
~3 oz Philly cream cheese
~1 c shredded extra sharp cheddar cheese (Because I know my dad's favorite cheese is extra sharp cheddar.)
Grease crock pot.
Add corn, peppers, and spices to crock pot and mix.
Cover and cook on HIGH for 2 hours.
Add cheese and mix.
Recover and cook on HIGH for 15 minutes or until cheese is melted.
8 servings.
Nomnomnom. My mom decided (without telling me) that she doesn't eat peppers anymore, but she did say that she enjoyed the corn part. Dinner was kind of hectic (imagine that), but I THINK everyone had some and all of the plates were licked clean by the end, so I'd call this a success.
