We've had mice in our new house for a month or so. My other half evicted one a week ago, but we've seen/heard another one in the last few days, so our traps are STILL out. I hate throwing away food and we all know that I'll eat pretty much anything regardless of how old it is. However, I do draw the line at food that's been moused. Luckily for us, Mickey and Minnie left our couscous alone. (But they liked our various rices and powdered sugar...)
"Mouse In The House Chicken Curry" (6 quart pot)
~3 boneless, skinless chicken thighs, cut into bite-sized pieces
~1 (15 oz) can pinto beans, rinsed and drained
~1 (6 oz) jar quartered artichoke hearts, drained
~1 small onion, diced (From the CSA.)
~2 garlic cloves (From the CSA.)
~1 t curry powder
~pinch salt
~pinch pepper
~couscous, cooked as directed on package
Add all ingredients except couscous to crock pot and mix.
Cover and cook on low for 8 hours.
Serve over couscous.
3 servings.
Go make this. Now. You'll thank me.
