Something light.

I crocked this yesterday. My other half requested "something light" because his office was having their Christmas party in the afternoon. I shoved a bunch of veggies into my crock pot and *poof*!

"Something Light Veggie Stew" (6 quart pot)

~1 eggplant, cut into small chunks
~1 sweet potato, cut into bite-sized pieces
~1 onion, chopped (From the CSA.)
~2 garlic cloves, chopped (From the CSA.)
~1 (15 oz) can tomato sauce
~1 (15 oz) can garbanzo beans, rinsed and drained
~1/2 c cooking sherry
~1 t herbs de provence

Add all ingredients to crock pot and mix well.
Cover and cook on low for 7 hours.

6 servings.
This was super yummy. AND vegetarian! I deserve a pat on the back for this one. Go make it. Now.
