Look what I found!

I found the card! I crocked this what...2 weeks ago, maybe? It was the last card in the bunch and now I can share it with all of you. Yay!

(For those who may be curious, the card was in my jacket pocket.)

"Curry Chicken" (6 quart pot)

~6 boneless, skinless chicken breast haves (I used 4 chicken breasts.)
~1 1/4 t salt
~1 (14oz) can light coconut milk
~1 t curry powder
~1/2 t turmeric
 ~1/2 t cayenne pepper
~3 green onions, sliced, divided
~2 T cornstarch
~2 T cold water
~2 T lime juice
~3 c hot cooked rice

Sprinkle chicken with salt.
In a large nonstick skillet coated with spray, brown chicken on both sides.
Place chicken in crock pot.
Combine coconut milk, curry powder, turmeric, and cayenne; pour over chicken.
Sprinkle with half of the onions.
Cover and cook on low for 5 hours or until the chicken in tender.
Combine cornstarch and water until smooth; stir into crock pot.
Cover and cook on high for 30 minutes or until sauce is thickened.
Stir in lime juice.
Serve chicken with rice and sauce; sprinkle with remaining onions.

(I served it with sautéed string beans from the CSA.)

6 servings.
I LOVE curry chicken, so I was pretty happy when I saw that this card was in the final bunch. It did NOT disappoint. I wanted to drink the juice. Mmm...perhaps I saved the best for last!
