At first, I thought this was going to be a dessert. It's not. At all. It is, however, the last of the recipes I'm doing out of the Mexican chapter in this E-book.
"Mexican Torte" (6 quart pot)
~2 lbs boneless skinless chicken breasts
~1 (15 oz) can diced tomatoes with green chilies
~1 (15 oz) can seasoned black beans
~1 onion, chopped
~1/2 t garlic powder
~1/2 t salt
~4 6" corn tortillas
~2 c Mexican blend cheese
Cut the chicken into 1" pieces.
Brown chicken.
Add tomatoes, beans, onion, garlic powder, and salt to the chicken and remove from heat.
Grease crock pot.
Put 3/4 c chicken in crock pot.
Top with tortilla.
Top with 1/2 c cheese.
Repeat layers.
Cover and cook on low for 5 hours.
4 servings.
It looks like vomit. It tasted...good. Not great. Soupier than I thought it'd be. Who wants to go to Mexico and have REAL Mexican food with me? Anyone?
