Slow cooking card.

Crock pots were invented for days like yesterday. A day spent working (Wait...she has a job?) and dealing with a soggy day where my entire day is spent saying, "Sorry, little man...we can't go outside today." I could've thrown something in the crock yesterday morning and just let dinner cook all. day. long. But I didn't. Why? Because making dinner didn't hit my brain radar until 4pm. I thought that I might need to have my slow cooking card revoked for that one. I hadn't even decided what recipe I was going to try. I quickly picked this one because of the short crocking time.

"Applesauce Chicken" (6 quart pot)

~3 frozen chicken pieces (I used 1 breast and 2 thighs because that's all I had frozen.)
~1 onion, chopped
~1 1/2 c applesauce
~2 garlic cloves, minced
~1 T apple cider vinegar
~1/2 t pepper
~1/4 t cinnamon
~1/4 t red pepper flakes

Place frozen chicken in crock pot.
Add onion to pot.
Mix applesauce, garlic, vinegar, pepper, cinnamon, and pepper flakes in a small bowl.
Pour mixture over chicken.
Cover and cook on high for 3 hours.

3 servings.
This was really yummy. It was spicier than I thought it was going to be, so if you're a wuss not into that kind of thing, you might want to do 1/8 of the flakes or leave them out entirely. I'm sure it's delicious either way. I guess it's a good thing I didn't turn in my slow cooking card after all!
