True story.

I cheated. But it wasn't TOTALLY my fault this time! I picked this recipe because it was a different beef stew.

"Azorean Spiced Beef Stew" (6 quart pot)

The original recipe is HERE.

~2 lbs beef stew meat
~6 garlic cloves, minced
~1 potatoes, cut into 1-inch chunks
~3 green onions, chopped
~3 c beef stock
~1 c grape tomatoes, cut into quarters
~1 c baby carrots, cut into thirds
~1 T salt
~1/2 T red pepper flakes
~1 t cumin
~1 t allspice
~1 bay leaf
~2 cinnamon sticks (I thought we had some, but I had to buy ANOTHER spice. Someday, I will have every spice possible. Even super crazy expensive saffron.)

Dump meat into crock pot.
Add broth.
Add tomatoes, potatoes, green onion, garlic, AND carrots.* (This is where I cheated. More on that later.)
Stir in salt, pepper flakes, allspice, and cumin.
Place bay leaf and cinnamon sticks on top.
Cover and cook on low for 10 hours.
Remove bay leaf and cinnamon sticks before serving.

6 servings.

*How did I cheat, exactly? If you peek at the original recipe, she mentions carrots in the ingredient list and then NEVER mentions them in the directions. I ended up realizing this WAY TOO LATE (and hour before dinner was done crocking), so I nuked the carrots and then opened the lid to the crock (gasp!) and threw them in to cook for the last hour. 
You know that beef stew recipe you have? Burn it. Make this instead. K? K. My other half said that this might be the best stew I've ever crocked. True story.
