I picked this because we had some quinoa in the pantry and I had absolutely no idea what to do with it.
"Quinoa Casserole" (6 quart pot)

~1 c quinoa (it was all we had left.)
~2 c chicken broth (or veggie if you want to make it OFFICIALLY vegetarian.)
~1 T olive oil
~1/2 t salt
~1/2 t cinnamon
~1/4 c chopped almonds
~1/3 c dried cranberries
~1 c fresh spinach
~1 c grape tomatoes, quartered
~4 oz crumbled feta
Add quinoa, broth, olive oil, salt, cinnamon, almonds, and cranberries to crock pot.
Mix well.
Cover and cook on low for 4 hours*
*don't do 6 like I did because it's WAY too long.
Fluff quinoa with a fork.
Add tomatoes, and feta.
Mix gently.
Dump spinach on top.
Cover and cook on high for 20 minutes.
Stir in spinach.
3 servings. (It would've been 4, but about a serving of it was charcoal-y)
When I opened the lid, I thought we were going to have to call the wing place. It was so overcooked. I pouted and everything. Luckily, I was able to salvage most of it and it was actually really good. My tomatosaretheWORSTthingsever little helper even gobbled up a some, so it must've been yummy, right? I'm kind of wishing there was more of it left!
This is the last recipe in the gluten-free experiment. My other half thinks that he actually did itch less, so that's a thumbs up. He also lost weight, so that's 2 thumbs up. However...We won't be going completely gluten-free (yet), but that's mostly because he's a homebrewer and gluten-free beer is "bodiless" and lame.
