A friend of ours is moving out of the country soon and last weekend, he donated some of his pantry to my cause. (Hi Baker!) Some of the donated items found their way into today's dinner.
"Twist on an old favorite" (6 quart pot)
~3 Morningstar Spicy Bean Burgers, defrosted and cut into bite sized pieces
~14 oz can corn, drained
~3/4 of a 14 oz can black beans, drained
~2 T onion flakes
~1 c beef broth
~1 pkg cornbread mix
~2 T butter, melted
~1 egg
~chili powder (to taste)
~cayenne pepper (to taste)
Mix burger pieces, corn, beans, onion, and beef broth in medium bowl.
Dump mixture into greased crock pot.
Mix cornbread mix, butter, and egg in medium bowl.
Pour mixture over burger mixture.
Sprinkle chili powder and cayenne pepper on top.
Cover and cook on low for 6 hours.
6 servings.
This was pretty surprisingly good. The cornbread was a bit dry, but it turned out better than I thought it would. There's a reason I use recipes. I have absolutely no faith in my creative abilities when it comes to cooking. None at all.
