Merry Couscous!

Our friends (Hi Karina and Kohnke!) invited us and another couple (Hi Tricia and Shaun) over for Christmas Eve dinner. I volunteered to bring an ice cream cake and a side. What I ended up whipping together was inspired by THIS. That's what happens when I brainstorm while eating leftovers, I guess.

"Christmas Couscous" (6 quart pot)

~1 (15) oz can dark red kidney beans, rinsed and drained
~1 (15 oz) diced tomatoes (Because red is Christmassy.)
~1 (4 oz) can mushroom stems and pieces, drained
~1 small onion, diced (Last onion from the CSA. Woot!)
~2 garlic cloves, chopped (From the CSA.)
~1 t curry powder
~1 c frozen peas (Hey! Green is Christmassy, too!)
~1 c couscous, prepared as directed on package

Add beans, tomatoes, onion, cloves, and curry powder to crock pot and mix.
Cover and cook on low for 6 hours.
Stir in peas and couscous and cook until peas are headed through. (I let mine sit for about 10 minutes.)

6 servings.

Yum. I need to make more couscousy things. It's really fun to play with. EVERYTHING was super yummy and getting to be social while my little helper runs around like a maniac is always a good time. Now...to finish Love Actually.
